A short and genuinely honest answer: this site needs no cookies to work, and sets none unless you say yes.

1. The short version
This website works without cookies. None are set when you arrive. If you press Accept on the banner, one analytics cookie would be used to tell me which pages people find useful. If you press Reject, or ignore it entirely, nothing is set.
2. What a cookie is
A small file a website asks your browser to store, so it can recognise your browser on a later visit. Some are necessary for a site to function. Others, like analytics and advertising, are not, and those need your permission before they can be used.
3. What this site uses
Strictly necessary
None. There is no login, no basket and no session to maintain, so there is nothing this site needs to store in order to work.
Your cookie choice
When you press Accept or Reject, that answer is saved in your browser's local storage so the banner stops asking. Local storage is not a cookie and is never sent to a server. It stays on your device and holds nothing but the word "accept" or "reject".
Analytics, only if you accept
If you accept, analytics may be loaded to count page views and see which pages are read. It is not used for advertising, not shared with advertisers, and not used to identify you personally.
4. Third-party requests that are not cookies
Being complete about this: the site loads its fonts from Google Fonts. That does not set a cookie, but your browser does make a request to Google's servers, and Google therefore receives your IP address. This happens on every visit regardless of your cookie choice, because it is part of how the page renders. The privacy policy covers it.
5. Changing your mind
Clear this site's data in your browser settings and the banner will appear again on your next visit, letting you choose differently. You can also block cookies entirely in your browser; this site will work exactly as well.
